Keto Strawberry Shortcake

You'll love this bright, tart, and sweet take on the classic shortcake. Plus, even though the cake has a stunning aesthetic, it is surprisingly simple to make, making it a fantastic project to do with the whole family!

A keto strawberry shortcake is a perfect dessert when you want something bright, sweet, and bursting with the fresh flavors of summer, hallmarked by the scent of ripe and rich strawberries, contrasted with a refreshing and indulgent cream counterpart, pairing perfectly as the ideal keto confection for any special occasion.

If you are looking for a tangy treat filled with fresh summer flavors, this dessert will not disappoint. With the scent of ripe, rich strawberries contrasted with a luxurious and indulgent cream counterpart, this is the perfect keto confection to make for any special occasion—even if we're honoring an ordinary Wednesday.

The cake is easy to make with local ingredients, and you likely already have many of the necessary components in your kitchen.

Some Additional Tips

You can use fresh strawberries in the cake batter if you don't have freeze-dried. We don't want added moisture, so pat the berries dry before washing and chopping them into equally-sized pieces.

Refrigerate the cake for up to five days, or place the cake into thezer for 30 minutes to chill. Then vacuum-seal and store the cake for months. If you slice the cake before freezingit, you can enjoy single servings of the cake as you wish.

My homemade strawberry jam is an easy recipe to whip up and can at home for long-term storage and use, but there are also a few store-bought brands, like Good Good or ChocZero, that I've tried and love that can stand I, instead, if you're short on time.
