Keto Sweets & Drinks: What I Brought to the Cookout | July 4, 2002

Summer has officially begun, and many of us are excited to get outside and reconnect with people we haven't seen for a while. My task for the Fourth of July cookout was to bring sweet treats and drinks to add to the holiday spread.


Here's what I came up with...

I've been experimenting with unsweetened seltzers to create keto-friendly sodas in seconds for a while, and cucumber water, paired with mint and lemon or lime, is also the perfect base for a hydrating sugar-free spritzer that's ideal for cooling down in the summer heat.



I use a simple recipe of adding 16 oz fluid base (plain or seltzer water, coconut water, water kefir, etc.) to the juice of one lemon, with one teaspoon of liquid stevia and build flavors from there.


Adding cucumber slices, lemon slices, mint sprigs, and sparkling water to a carafe and letting it infuse and cool for a few hours in an airtight container is all it takes to make cucumber and mint water. Chill water in an air-tight container for a few hours until ready to serve, or add ice to enjoy sooner.


Red, White & Blue Keto Cupcakes

We made three varieties of cookies from scratch, but I had and wanted to try this Duncan Hines #keto cake mix, made with almond and coconut flour, sweetened with allulose, for a while to test whether it's as moist and tasty as their traditional cake.


The box mix creates a tender and light cake, and all you need to do is add 1/2 cup of water, three eggs, and three tablespoons of

coconut oil to the dry mix.


Then bake the cakes at 325 degrees F for 22 minutes, or until a toothpick inserted comes out clean.


The cake base is a winner! I topped the cupcakes with a simple keto classic white #icing recipe that's excellent on it's own or you can use to make many variations like lemon, chocolate, or fruit-flavored frostings, as well.

White Chocolate & Macadamia Nut, Chocolate Chip & Macadamia & Flourless Fudge Cookies


I've loved using the King Arthur Keto Wheat Blend over the past year.


Whether making pizza dough, English muffins or sweet baked goods, the stuff just delivers while keeping carbs in check and never contributing to increased sugar #cravings.



I relied upon a couple King Arthur recipes to make the cookies I took to this year's cookout. I made a white chocolate and macadamia nut and a milk chocolate and macadamia nut cookie based on their base recipe. And their Flourless Fudge Cookie recipe came in handy to round out the trio for the chocolate lovers, which is pretty much everybody!


I used Lily's Chocolates in these cookies. Both the white chocolate morsels and their milk chocolate morsels were the perfect addition to these chunky and buttery cookies.


The morsels are sweetened with stevia, taste just like sugar, and have no awkward aftertaste, so they're perfect for all your keto baking needs!
